All you need to thicken this Thanksgiving staple without flour are instant potato flakes.
Gravy is the liquid magic that pulls Thanksgiving plates together. It’s comforting, rich in flavor and a dressing millions of people look forward to enjoying on good ol’ turkey day.
But if you’re looking to go more plant-based this year, or need to go gluten-free, there’s no reason you have to miss out on good gravy.
While there are many ways to whip up gluten-free gravy, with ingredients such as arrowroot and corn starch, instant potato flakes make a fantastic thickening agent while adding a creamy texture. Coming in with a mild flavor, potato flakes make a great base for whatever flavors you are looking to achieve in your Thanksgiving gravy.
Here’s a gluten-free gravy recipe that requires no flour or meat drippings (unless you want the drippings, of course!), and is super easy to make.

Start Slow When Working with Instant Potato Flakes
When preparing your gravy, add instant potato flakes as you would flour but take it slow. There’s no specific portion of potato flakes to the gravy when thickening. Starting with 1 Tbsp of potato flakes will make it easy to gauge how much you need. Continue to add the potato flakes a little at a time until it reaches your desired consistency.
If the gravy becomes too thick, slowly stir in some broth. Usually, one tablespoon of potato flakes per cup of stock makes a gravy with a medium thickness.
Now, Let’s Make Some Gravy!
INGREDIENTS
3 cups of your choice of broth (you can use turkey drippings if you desire- if you choose drippings use 2 cups)
2 Tbsp Olive oil
1 garlic clove minced (optional)
1 Tbsp rosemary
1 Tbsp thyme
1 Tbsp instant potato flakes (you can use potato starch; if you do, the recipe will require 2 Tbsp)
Salt and pepper to taste
Whatever herbs your palate is craving
DIRECTIONS
In a small pan, add olive oil and garlic and cook for 3 to 5 minutes. Add the broth (or turkey drippings) herbs, and spices into the pan. Bring to a boil and then reduce heat to a simmer. Simmer for 15 minutes. Very slowly, using a whisk, add in the instant potato flakes while whisking quickly to avoid clumps. Whisk until you reach your desired consistency; it should only take a few minutes. Add more potato flakes if a thicker gravy is desired, no more than 1 Tbsp at a time.
Now, pour it over everything and enjoy!
