Portabella Mushroom Chicken

A Bread free, low carb option to the chicken sandwich

Ingredients
- 4 Portabella Caps
- 2 tablespoons Coconut Oil
- 1 boneless, skinless chicken cutlet, cooked (and cut into two pieces)
- 2 slices of tomato
- 1/2 cup fresh spinach leaves
- 1 tbsp. Hummus
Instructions
- 1- Heat coconut oil in a skillet and cook mushrooms for about 3-5 minutes on each side or until the mushrooms turn golden brown on the top and become tender.
- 2- Remove the mushrooms from the pan.
- 3- On one mushroom, pile on cooked chicken, tomato, spinach and ½ tbsp. hummus on each sandwich
- 4- Top with the other mushroom.
- 5- Repeat with other mushrooms. Then cut in half or eat whole, and enjoy!
Notes
- Can use A large romaine lettuce leaf as the wrap if you don't fancy mushrooms!
