Turkey & Kale Muffins

Ingredients
- 1lb Lean ground Organic Turkey (can use Quinoa for meatless option)
- 1 small red vidallion onion
- 2 Cloves garlic chopped
- 1/2 batch of Kale OR 5 leaves chopped
- 3-5 small beets (optional if you like sweet and salty mix) chopped
- 1/2Cup Basil
- 1 tbsp. grape seed oil
- Sea or Himalayan salt to taste!
Instructions
- This can be cooked 2 ways-
- OVEN-
- Heat oven to 350
- Chop all veggies
- Mix ground turkey with chopped veggies and place in muffin tin
- Bake for 30 to 40 min depending on oven. Check after 30 min
SKILLET
- Set skillet to medium/high heat
- Add to skillet 1/2 tbsp. of grape seed oil
- Chop veggies
- Mix turkey with veggies and form them into patties or balls
- Cook on skillet for 7 to 9 min a side.
Notes
- If using Quinoa in place of turkey, cook quinoa like normal and use in place of meat.
