Eggplant "French Fries"

Clean version of French fries
Ingredients
- 3 large black eggplant (not purple Japanese version)
- ¾ cup quinoa flour
- 1 tsp cumin
- 1 tsp rosemary
- 1 tsp coriander
- 1 tsp black pepper
- 1 tsp Aleppo pepper (paprika is good substitute)
- Sea or Himalayan salt
Instructions
- Peel the eggplant with thin lines of black skin still on.
- Clean eggplant thoroughly and pat eggplants dry.
- Cut the eggplant into ½ inch wide and 3 inch height “French fry” pieces.
- In a bowl, mix the olive oil, rice flour and spices. (Can use coconut oil)
- Coat the eggplant pieces with flour mixture and place eggplants pieces on baking sheet.
- Bake for 20 minutes at 375. In a food processer, mix the red peppers, tahini and olive oil
